Pizza dough fast version


I know what you want to say...pizza is cheap,pizza has home delivery so why would you make pizza in home?Well,because is a savory and easy to make food and on top of it you can use leftovers.If you tried to make pizza using the normal gas or electric oven you may had it ,hmmm how to say...not that good.But if you pay attention to few details you will always get a crispy crust even with a normal oven.In Italy pizza is usual baked in wood fire oven on very high temperature .Waittt don't run,there is still a chance for us,people with small ovens .To bake a pizza and obtain a crispy crust we need very high temperature or a little trick.Just increase water ration in pizza dough so the longer backing won't make it very dry.

Servings:2 pizza (30 cm diameter)

Ingredients:
450 g white flour (tip 00)
 25 g fresh yeast (read the proportion indication from the package)
10 g of sugar (1 tea spoon )
10 g salt (1 tea spoon)
300 ml water

Cooking steps:
1.In a small bowl add 200 ml water ,2 table spoons of flour ,the sugar and the yeast .Mix well to combine and set it aside for 10 to 15 minutes.In this time the yeast should start to look like a foam (see the picture)

2.While the yeast is on rest,sift the flour and the salt in a large bowl .Make a well in the flour and add the yeast mixture.Start mixing them. The dough must be knead for at least 10 to 15 minutes.The resulted dough is soft and supple ,a little stick but don't add more flour!!Remember that water contain is very important for the final result.
Cover the dough with a clean and wet kitchen cloth and let it raise for 1 hour.The dough should double in size.

3.After 1 hour divide  the dough in 2 exact same size balls .Shape each ball into a disc .Normally you should do this by hands but because I like perfect symmetry I used a rolling pin .
4.Put each disc in a backing tray dusted with a bit of flour.

5.Add sauce and toppings and  voila!Bake in a preheated oven at the highest temperature of the oven and serve,as easy as that!
